Licensee Nigel Ranger is something of an offal afficionado, having sampled both tripe and spleen on his travels abroad. It was Nigel who drew our attention to pani ca meusa, a popular meal in Palermo and Naples which consists of spleen and sheep's tripe fried in lard and served in a soft bread bap. Sounds and looks delicious. We're not sure about the taste though.
